Stuffing

I was a tad bit skeptical with doing stuffing since we won’t be having any turkey haha. But after putting this together, this could be an awesome side dish.

We used a regular bag of croutons from Walmart, If you grab a bag from a bakery it will take this recipe to the next level! Fresh croutons from bread made at a mom & pops without preservatives mhmm I can almost taste it!

Quick reminder: when you are crushing your croutons you don’t want a crumb like consistency. Either smash it by hand or use a processor. A couple of pulses should do.

 ½ Yellow Onion
 2 Sticks of Celery
 ½ Green Pepper
 ½ Red Pepper
 1 cup Vegetable Stock
 1 tbsp Mojito (garlic sauce)
 1 tsp Parsley
 1 tsp Oregano
 ¼ tsp Salt
 15 oz package of Croutons
 Coconut Oil Pan Spray

Spray saucepan and place on medium heat.

Add all veggies and garlic, cook till tender

While veggies are simmering, crush croutons either by hand or with a chopper.

Once veggies are tender, add all dry ingredients.

Add vegetable stock, mix and let it simmer for 5 minutes.

Preheat oven to 375

Add crushed croutons to the mixture.

Bake for 30 minutes on 375 or until croutons are nice and crispy.
