Rice Pudding

Rice Pudding is the best after Thanksgiving recipe, once you have some cooked rice you are ready to go. I usually like to make my rice in a rice cooker. If you prefer to do the same, follow your rice cooker instructions. If you prefer to make the rice on the stove, I’ve added the ingredients below.

Perfecting this recipe was a journey! Out of all the desserts, we struggled the most with completing this one with alternative milks. Our first try, we added way too much cinnamon and it came out brown haha.

 2 ½ cups white rice
 4 ½ cups water
 1 tbsp oil of preference

Add water to pan and bring it to a boil.

Once water is boiling, add rice and oil and stir.

The trick is to keep the water boiling till you start to see the rice absorb about 80% of the water.

Once the majority of the water is absorbed, stir, cover and place on low.

Leave it on low for 10-15 minutes.

After 15 minutes, lift, stir and try it out for consistency.

Ingredients

 2 ½ cups white rice
 4 ½ cups water
 1 tbsp oil of preference

Directions

 1 cup cream of coconut
 1 tbsp Agave
 1 tbsp Vanilla Extract
 1 cup Almond Milk

Place a saucepan on medium heat.

Place all liquids and warm for about 7-10 minutes

Once the mixture is warm, not boiling, add rice.

Stir till rice soaks up all of the fluid, should be a light simmer till all contents are absorbed. It usually takes about 25 minutes.

 1 cup cream of coconut
 1 tbsp Agave

 1 cup Almond Milk
