Lasagna [Vegetarian]

We had original plans of making the lasagna with Daiya cheese to keep it vegan. But, I didn’t want to be the only one who would eat it, so we made a vegetarian one instead.

& again both my grandfather and brother ate it without even noticing the differences in the ‘meat’.

This is another recipe were we use Morning Star Crumbles, I’m telling you guys, this stuff is so delicious. I rarely ever use alternative meats. Mostly because like anything that comes in a package, there are tons of preservatives. They have to add salt to keep it fresh for long periods of time. So using crumbles is a treat in our home. haha

& they are also a sister company to Kelloggs and that scares me.

BUT it tastes delicious & brings comfort and that’s what holiday food is all about.

Now, let’s get to the recipe. Once you have everything prepared, make a small assembly line. It’s easier to make your layers if everything is within reach.

 Lasagna (Pasta of Choice)
 4 cups Pasta Sauce
 2 cups Mozzarella Cheese (Daiya cheese to make it vegan)
 1 cup Ricotta Cheese
 2 cups Morning Star Crumbles *
 1 tbsp Parmesan Cheese
 1 tsp Oregano

Place crumbles in a saucepan on medium heat.

Cook till brown, the crumbles are already cooked & frozen, so your warming it up & cooking it till your preferred consistency.

Once they are cooked, we like to place it in a chopper to get rid of the large clumps. Don’t pulse it too much, just enough to get consistency in shape. Then, place the crumbles back in the saucepan and add your pasta sauce. Keep on low heat, covered till you are ready to start layering.

Preheat oven to 350

In an 8x8 pan, coat the bottom of the pan with just enough sauce to cover the entire pan.

The first layer is your pasta, then you are going to add another layer of your ‘meat’ sauce.

Once you have your layer of meat sauce, place a couple of teaspoons full of ricotta on each noodle.

Add your Mozerella, sprinkle parmesan and start again, doing each layer until it’s at the top of the pan of your choice. Your last layer should be cheese!

Sprinkle the oregano on top for extra flavor.

Grab aluminum foil, spray the side that will be touching the food with non-stick cooking spray so that it won’t get stuck.

Bake at 350 degrees for 35 minutes.
