Jackfruit Ropa Vieja

Ropa vieja is a signature Puerto Rican dish, the original recipe is made with shredded steak. This has to be one of my mother’s favorite, a meal that brings back so many memories of her grandmother. I think she would be proud to see her granddaughter throwing it down. I’m not sure how she would feel about it being plant-based haha.

Anyway, if you have time and energy to get a jackfruit and peel/shred, go ahead and do your thing! We didn’t, so I bought a pre-packaged container of jackfruit. It was lightly seasoned, so we rinsed it twice before using our ingredients.

This recipe traditionally is placed over white rice. Which is of course, not the healthiest of choices. The ropa vieja has so much flavor, its delicious over any kind of grain. Mix it up!

 ½ Red Pepper
 ½ Green Pepper
 ½ Onion
 9 oz Packet of Jackfruit [any brand, without seasoning]
 4 oz Tomato Sauce
 10 Olives
 3 tbsp Mojito
 1 tsp Adobo light *
 1 tsp Oregano
 2 tbsp Olive Oil
 8 oz Water or Vegetable Stock

Place pan on medium heat.

Add oil to coat the pan & let it warm.

Add sofrito single (two tablespoons of sofrito) and mojito.

Add peppers, onions, and olives [We prefer to slice the peppers horizontally]

Add the tomato sauce & water. If you prefer to use veggie stock, go ahead and substitute.

Add all dry ingredients; adobo and oregano. At this point, mix well and prepare to add jackfruit.

Add jackfruit chucks.

Keep pan on medium heat till it starts to lightly boil.

Once it starts to boil, shred the jackfruit chunks using a fork.

Lower the heat to low and let simmer for 15-20 minutes.
