Apple Hand Pies

I can not believe Thanksgiving is this week! I had every intention of uploading all these recipes last week to leave a week to prepare and grab all the ingredients. But you see how my vacation is set up… haha

I just got back from spending two weeks in NY, boy did I miss it. I spent all the time I possibly could with friends and family completely disconnected from my laptop. So here I am, rushing to upload a bunch of recipes my mom and I worked on. Better late then never right?

We will start with desserts because they are all so delicious and easy to make.

Apple Hand Pies are great to make for a large group, bring a huge tray with a bottle of our coquito & you’ll be the talk of the town.

A couple of things to remember, when you are closing up the pies, be sure to brush water around the edges. We found that adding that extra moisture makes it stick to each other easier, you don’t want the apples to slip out.

We also used the Goya brand of disc, but you can use any kind of pastry disc. Even if its frozen! Just defrost and get to packing.

Yields1 Serving
 4 Apples
 1 tsp Cinnamon
 1 tbsp Lemon Juice
 ¼ tsp Cloves
 1 tsp Vanilla Extract
 24 pack of pastry disc

Preheat oven to 350 degrees.

Peel and cut apples into small cubes.

Place saucepan on medium heat, add apples, lemon juice, cinnamon, vanilla extract, and cloves.

Cook till light brown, mix and simmer till soft.

Place one scoop on disc, glaze the borders with water and cover with another disc. Smash the border of the disc with a fork, make sure to press hard. (you should see the fork marks)

Place on a non-stick pan, lightly glaze with butter.

Bake at 350 degrees for about 25 minutes or browned to your liking.
